I came across this particular recipe for choux pastry a couple of years back, and I found it to be more forgiving of my lazier tendencies. Consider this an update in my quest to find the most failproof recipes over the years.

Vanilla Pastry Cream


This is a really simple recipe for Vanilla Pastry Cream by Anna Olson. It has just the right amount of sweetness and a wonderful vanilla flavor. Great for filling cream puffs and eclairs, but good enough to eat as a pudding.
