I thought, “Why not try making my own honeycomb confection?” I’ve made brittle before, and I know that the honeycomb toffee is similarly made from caramel, but how does one get it to that airy consistency?
This buttercream is great for spreading, filling and piping. I’ve made some buttercream roses with it, and it definitely holds sharp edges using star tips.
Sorry, I couldn’t resist using quotation marks for my post title. But really, this is no ordinary ice cream.
