Yay, something fun. Not to mention something great for entertaining. If you’re a big fan of chocolate, then you ought to have eaten a version of this cake at least once in your life.
The Chocolate Lava Cake is decadent and extremely sinful, combining a luscious cake outside, with a creamy chocolate treat inside. It’s high calorie, but hey, everyone deserves to cheat once in a while.
Traditionally, this is made with semi-sweet chocolate. But sadly, I didn’t have any lying around the house. So I decided to be a bit more adventurous, and made the cakes with White Chocolate and a Strawberry Chocolate Compound.
- 2 whole eggs
- 2 egg yolks
- 1/4 cup white sugar
- 1/2 tsp vanilla extract
- 1 stick unsalted butter
- 1/8 tsp salt
- 200 grams of semi-sweet, white, or strawberry chocolate
- 3 Tbsps all-purpose flour
Butter and flour 4 4-ounce ramekins. Set aside.
Beat together the whole eggs, egg yolks, sugar, salt and vanilla extract until light and fluffy.
In a double boiler, melt together the butter and chocolate. Whisk together after melting to homogenize.
Slowly pour in the melted chocolate and butter into the eggs with continuous whisking. This will temper the eggs and prevent curdling. Sift in the flour and whisk until well-combined.
Pour the batter evenly into each ramekin. Refrigerate for 30 minutes.
Preheat the oven to 425ºF (220ºC).
Place the ramekins on a casserole dish and bake in the preheated oven for 15 to 18 minutes. Set aside to cool for 15 minutes.
Loosen the edges of the cakes with a knife and flip onto a plate for serving. Dust with icing sugar or add a scoop of ice cream.
This recipe is incredibly simple to make. You can have the batter ready and in the fridge just before your guests arrive if entertaining. Then it’s just a matter of throwing these in the oven to bake in time to serve for dessert.
