I’m a big fan of vegetables, but not of salad. Once in a while though, I come across a recipe that is just so irresistible that I forget about my food apprehensions. The following recipe is an example of that. This salad recipe is incredibly refreshing and sweet, with just a bit of bite from the feta. It’s great for a simple dinner party, and even when you simply want something healthy and crunchy to snack on.
- 6 cups torn mixed salad greens
- 2 medium apples, chopped
- 1/2 cup raisins
- 1/2 cup green grapes, halved
- 2 tablespoons olive oil
- 4-1/2 teaspoons balsamic vinegar
- 1 tablespoon honey
- 1-1/2 teaspoons lemon juice
- 1 garlic clove, minced
- 1/4 cup crumbled goat cheese
In a small container (with a leak proof cover), combine the olive oil, balsamic vinegar, honey, lemon juice and minced garlic. Cover the container and shake everything together. Set aside.
In a large bowl, combine the greens, apples, raisins and grapes. Pour the prepared dressing over it and toss together. Top with the crumbled cheese.
